A freeze-dried product is only as stable as its packaging. Low residual moisture does not last unless the barrier, seal and storage environment prevent moisture from returning.
Define the quality target first
Residual moisture and water activity are related but different measures. The target must come from the product’s stability, texture, rehydration and safety requirements — not from a generic “as dry as possible” instruction. Agree on the measurement method before comparing batches.
Design drying and packaging together
- Choose a barrier material and seal that hold the target water activity over the intended shelf life and distribution conditions.
- Control fill-room humidity and the time between drying and sealing.
- Consider modified-atmosphere or vacuum options only where the product and barrier support them.
- Validate the seal and storage conditions with real samples, not assumptions.
